Rich, grassy, with brussels sprouts, spinach, grilled asparagus, and yeasty scents and flavors. Pleasant bitterness with slight iodine echo.
Sencha means “new tea,” and it has been Japan’s favorite since its emergence in the early eighteenth century. Grown in full sun, it is the first buds and youngest leaves harvested at the beginning of the season. These are steam-fired to preserve the green color and halt oxidation,then processed through roller and dryer phases until the optimum results are achieved. Sencha is high in polyphenols and vitamin C.
