Sencha means “steamed tea,” and it has been Japan’s favorite since its emergence in the early eighteenth century. Grown in full sun, it is the first buds and youngest leaves harvested at the beginning of the season. These are steam-fired to preserve the green color and halt oxidation, as opposed to Chinese green tea, which is usually baked or pan-fired and comes out more yellow in color. Sencha origin is a blend of senchas from Kagoshima, Shizuoka, and Kyoto, which provide the right balance of liveliness, sweetness, and umami.
